Food Preservation Classes: 1-3 p.m. Tuesdays, June 9, 23 and 30, University of Illinois Extension, 100 S. U.S. Highway 45, Grayslake. The first class will be "Jellies and Jams" with basic steps to making jelly and use of pectin. The second will be "Boiling Water Bath Canning" with safe methods to preserve fruits, tomatoes and pickles; a pickle and a tomato salsa recipe will be tested. The third class will be "Freezing and Dehydrating" discussing preserving herbs and how to blanch a product for freezing, with a tasting of previously frozen and dehydrated foods. A traveling exhibit in the library parking lot, "Held in the Heartland: German POWs in the Midwest, 1943-46," will tell the story of how German immigrants in the Midwest working at POW camps often befriended the prisoners who were housed in the 250 camps located in Middle America.
