1 pound corned beef, cooked

cup mayonnaise

cup sour cream

2 tablespoons sweet pickle relish

1 can (about 14 ounces) sauerkraut, drained

pound Swiss cheese, shredded

12 ounces (about 24 slices) cocktail-size pumpernickel

Heat oven to 350 degrees.

In a food processor, combine corned beef, mayonnaise, sour cream and sweet relish. Set aside.

Arrange bread slices on jelly roll pan; bake 8 minutes, or until toasted. Remove and set aside. Turn oven to broil. Spread corned beef mixture on bread slices. Sprinkle with sauerkraut and top with Swiss. Broil briefly until golden brown, watching carefully, 1 to 2 minutes. Serve with Thousand Island dressing for dipping.

Serves eight to 12.
