Three-Bean Turkey Chili
½ medium onion, chopped
Oil
1 pound ground turkey
¼ cup grated carrot
¼ cup chili powder
1 teaspoon garlic powder
½ teaspoon cayenne pepper
1 tablespoon dried cumin
Salt and pepper to taste
1 whole chipotle pepper in adobo sauce
1 teaspoon adobo sauce
6 ounces tomato paste
1 can (14½ ounces) whole tomatoes, smashed
1 can (15 ounces) butter beans, rinsed
1 can (15 ounces) red kidney beans, rinsed
1 can (15 ounces) Great Northern beans or navy beans, rinsed
⅓ pound macaroni noodles, cooked
⅓ cup water

Jalapenos
Grated cheese
Sour cream
Saute onions in a thin layer of oil until soft; add turkey and carrot and cook until turkey is brown. Add chili powder, garlic powder, cayenne, cumin, salt and pepper, chipotle pepper, adobo sauce, tomato paste and tomatoes; mix well and simmer 5-10 minutes.
Add all the beans and simmer 5-10 minutes more. Add cooked noodles and water, if desired, to thin. Serve with favorite toppings.
