BLT chicken club salad

2 whole chicken breasts

Olive oil

Salt and pepper

1 pint grape tomatoes, halved

1 cup romaine lettuce, torn in pieces

10 slices bacon, fried crisp and crumbled

8 ounces Swiss cheese, cut in thin strips

8 ounces rotini, cooked

Dressing

1 cup mayonnaise

2 tablespoons bacon grease, cooled

2 tablespoons red wine vinegar

2 tablespoons milk

2 tablespoons lemon juice

Heat oven to 350 degrees.

Rub chicken breasts with a thin layer of olive oil, season with salt and pepper. Bake for 35 minutes; cool and cut into strips.

In a large bowl, combine chicken with tomatoes, lettuce, bacon, Swiss cheese and rotini.

For dressing: Whisk together mayonnaise, bacon grease, vinegar, milk and lemon juice. Season with salt and pepper. Fold dressing into salad; chill well.

Serves four to six.

Nutrition values per serving: 510 calories, 40 g fat (6 g saturated), 17 g carbohydrates, 5 g fiber, 23 g protein, 55 mg cholesterol, 700 mg sodium.
