Blueberry Squares

Crust3 tablespoons butter or margarine 1/3 cup sugar2 egg yolks 2/3 cup all-purpose flour1 teaspoon baking powder 1/4 teaspoon salt 1/4 cup milk 1/4 teaspoon vanilla extractTopping2 egg whites6 tablespoons sugarPinch salt1 cup fresh blueberriesHeat oven to 350 degrees. Grease an 8- or 9-inch square baking pan.For the crust: Cream butter and sugar until creamy; beat in yolks.In a separate bowl, combine flour, baking powder and salt; add to creamed mixture alternately with milk and vanilla. Press into prepared pan and bake 18-20 minutes. Cool.Increase oven temperature to 400 degrees.In a clean, dry bowl, beat egg whites until they form stiff peaks; beat in sugar and salt. Gently fold in blueberries. (If you break them, the juice will turn the meringue blue.) Spread over cooled crust. Bake, watching closely, for 10 minutes or just until meringue is brown. Store at room temperature.Serves 16.Nutrition values per serving: 147 calories, 4 g fat (2 g saturated), 27 g carbohydrates, 0 fiber, 2 g protein, 35 mg cholesterol, 86 mg sodium.
