Backpacker's Carbonara
3 tablespoons olive oil 1/2 pound smoked bacon, diced 1/2 large onion, chopped3 garlic cloves, chopped fine2 cups dry red wine or water3 large eggs6 ounces hard cheese (parmesan), grated1 pound pastaSalt and pepperPut the oil, bacon and onion in a frying pan and heat over wood coals. Saute, stirring, about 1 minutes or until the bacon and onion are browned; add garlic and cook for a minute longer. Add the wine to the pan, simmer 5 minutes, and keep warm. Meanwhile, bring a large pot of water to a boil for the pasta. Mix the eggs and cheese in a bowl and set aside.Add pasta to boiling water and cook 8-10 minutes. Drain. Pour the egg mixture over the pasta and stir well. Then pour bacon mixture over the pasta and stir well.
