Not-Your-Everyday Meat Loaf
1 large egg
3 large egg whites
1/2 cup grated Parmesan cheese
1/3 cup minced fresh parsley
1/4 cup 1 percent milk
2 teaspoons salt
1/2 teaspoon ground nutmeg
1/2 teaspoon fresh-ground black pepper
1 package (10 ounces) frozen chopped spinach, defrosted
1 pound 93 percent lean ground beef
1 pound 91 percent lean ground pork
1 cup sliced green onions
1/2 cup dry bread crumbs
Lightly spray a standard loaf pan with vegetable oil; set aside.
Place the oven rack in the lower-middle position and preheat oven to 350 degrees.
Add the egg, egg whites, parsley, milk, salt, nutmeg and pepper to a small mixing bowl and whisk until combined, set aside.
Over the sink, by the handful, squeeze the defrosted spinach to remove as much water as possible.
Pull apart the ground beef and ground pork with your hands as you add it to a large mixing bowl. Using a dinner fork, continuing breaking up and combining the beef and pork until almost combined. Add the onions, breadcrumbs and egg mixture to bowl and, using the fork, combine well.
Place the mixture into the prepared loaf pan and bake for 1 hour, 15 minutes or until a thermometer inserted into the center reads 160 degrees. Place the pan on a wire cooling rack for 15 minutes. Slice and serve.
Serves eight.
