Low-carb, Low-fat Veggie Pizza
Olive oil spray
1 onion, diced
1 cup yellow and red peppers, diced
1 cup mushrooms, sliced
2 cloves of garlic chopped
4 tortillas (Smart and Delicious preferred)
1 cup pasta sauce
Garlic powder to taste
Oregano to taste
14-16 ounces nonfat or low-fat mozzarella cheese (see note)
Heat oven to 350 degrees.
Spray olive oil spray in saute pan over medium heat. Add onions, peppers, mushrooms and garlic and saute until tender. Remove from pan and keep warm.
Put tortillas on baking sheet, spread ¼ cup spaghetti sauce on each tortilla, season with garlic powder and oregano to taste. Top tortilla with cooked vegetables and mozzarella cheese. Bake 5 minutes or until cheese melts.
Serves four.
Cook’s note: If using fat-free cheese, it may not melt completely.
