Nacho Skillet Casserole

1 pound ground sirloin

1 medium onion, chopped

1 teaspoon sugar

½ teaspoon oregano

1 teaspoon chili powder

1/2 cup fresh cilantro

1 can (15½ ounces) kidney beans, drained

1 can (15 ounces) tomato sauce

1 can (15 ounces) corn, drained

½ cup green pepper, chopped

1 lime, optional

2 cups tortilla chips, slightly broken

1 cup (4 ounces) shredded cheddar

In large skillet brown ground sirloin and onion; drain well.

Into the skillet stir sugar, oregano, chili powder, cilantro, kidney beans, tomato sauce, corn and green pepper; simmer 10-20 minutes, stirring occasionally until most of the moisture is absorbed. If desired, squeeze juice of lime over all.

Sprinkle with tortilla chips; top with cheese. Cover and cook another 2 to 4 minutes or until cheese melts. Serve immediately.

Serves six.
