Chinese Garlic Chicken
1 pounds skinless/boneless chicken, dark or white meat
20 snow peas, more or less to taste
1 medium yellow onion
1 red pepper
2 tablespoons peanut oil
1 tablespoon chopped garlic
2 teaspoons ginger, finely chopped
½ cup chicken stock
3 green onions, slivered
Seasoning
1 teaspoon salt
1 teaspoon sugar
2 teaspoons soy sauce
1 tablespoon oyster sauce
1 tablespoon white wine
1 tablespoon cornstarch
Sauce
1 tablespoon hoisin sauce
1 tablespoon ketchup
1 teaspoons soy sauce
1 teaspoon dried red chile pepper
1 tablespoon sesame oil
Cut chicken into bite-size pieces and place in a bowl. Remove tips from snow peas and cut diagonally into 1-inch pieces. Cut onion into quarter-inch thick slices and seed and dice the red pepper; place vegetables in a separate bowl.
For seasoning: In a small bowl, combine salt, sugar, soy sauce, oyster sauce, white wine and cornstarch. Add to chicken and mix well to coat. Let marinate at room temperature for 30 minutes.
For the sauce: In a medium bowl, combine hoisin, ketchup, soy sauce, chile pepper and sesame oil; mix well. Set aside
Heat wok and add peanut oil. Add garlic, ginger and chicken and stir-fry over high heat for 3 to 4 minutes. Add snow peas, onion, red pepper and chicken stock; cover and cook for 2 minutes over high heat. Add sauce and green onions; mix thoroughly. Serve over white rice.
