Passion Fruit-Glazed Pork Chops

Passion Fruit-Glazed Pork Chops1 tablespoon vegetable oil2 cloves garlic, minced 1 jalapeno, seeded and minced 1/2 cup dark rum 2 oranges, juiced 1 cup passion-fruit juice (see note)2 teaspoons fresh lime juice 2/3 cup brown sugar 1/2 cup red wine vinegar 4 teaspoons tomato puree 2 teaspoons Worcestershire sauce 1/8 teaspoon ground cinnamon Salt and ground black pepper to taste4-6 pork chopsHeat a saucepan over medium-high heat; add vegetable oil and saute the garlic and jalapeno. Add the rum and orange juice and bring to a boil, stirring, then lower the heat and simmer till the liquid has reduced by half.Add passion fruit and lime juices, brown sugar, vinegar, tomato puree, Worcestershire sauce and cinnamon; simmer over medium heat until sauce has reduced by half again.Season the pork chops with salt and pepper and grill over medium heat. Baste sauce over pork chops during the whole grilling process until nice and caramelized, but take care not to let it burn.Serves four to six.Cook's note: Look for passion fruit juice in the freezer section.
