Abby's Broccoli

1 1/2-3 pounds broccoli 1/3 cup canola or corn oil 1/4 cider vinegar2 cloves garlic, chopped3 tablespoons brown sugar1 tablespoon Dijon mustard1 teaspoon salt 1/2 teaspoon pepperCut broccoli into bite-size pieces. In large sealable plastic bag, combine oil, vinegar, garlic, brown sugar, mustard, salt and pepper. Add broccoli and coat well. Marinate for at least 2 hours.Serves four to eight.Cook's note: Broccoli will shrink significantly while marinating.
