Potato, Mozzarella and Tomato Pie
6-8 servings ( 1/2 cup each) instant mashed potatoes (made to package directions) or 2 pounds homemade mashed potatoes 1/2 pound shredded mozzarella3 medium tomatoes, peeled and cut into 1/2-inch slices1 teaspoon oregano1 teaspoon basilSalt and pepper to taste 1/2 cup parmesan, grated 1/4 cup butter, meltedButter and lightly flour a 9 1/2-inch deep-dish pie plate.Spread mashed potatoes in plate. Sprinkle half the mozzarella on the potatoes and top with tomatoes. Sprinkle oregano, basil, salt and pepper over all. Top with remaining mozzarella and parmesan.
