Chickpea Jamaica

Chickpea Jamaica
1 8-ounce boneless, skinless chicken breast
Flour for dusting
Olive oil
1/2 cup button mushrooms, sliced
1/2 cup yellow onions, sliced
1/2 clove garlic, minced
1 tablespoon mango, pureed
2 ounces white wine
1/4 teaspoon Cajun sesoning mixture
1 ounce of rum
1/2 ounce brandy
1 small green onion, sliced, for garnishDredge chicken breast in a little flour. Heat a thin layer of olive oil in a skillet and add the chicken breast, cooking over medium-high heat for about 3 to 4 minutes. Flip breast over and add the mushrooms, onions, garlic, mango, wine and Cajun seasoning. Simmer until sauce reduces by half. Add rum and brandy simmer another minute or 2. Transfer and gardish with green onion. Serves one Chef David Wiesner, Maxson's, Oregon
