Spinach Meatloaf

Spinach MeatloafOlive oil 3 onions, chopped3 cloves garlic, minced 1 pound Italian sausage3 pounds ground beef, lean 1/2 cup parmesan cheese1/2cup bread crumbs 4 eggs, beaten 1 box (10 ounces)frozen spinach, drained1/4 cup soy sauce or teriyaki sauce 6 slices baconHeat oven to 350 degrees.Heat a thin coating ofolive oil in a saute pan and add the onions and garlic. Cook untiltender.In a separate bowl, combine the sausage, ground beef, parmesan,bread crumbs, eggs, spinach and soy or teriyaki sauce. Add onion and garlicto meat mixture and blend well.Shape into loaf and place in a9-by-13-inch ungreased baking pan. Top with bacon strips and bake for 1uml; to2 hours.Serves 12 to 16.Nutrition values per serving: 374 calories,27 g fat, 6 g carbohydrates, 1 g fiber, 25 g protein, 138 mg cholesterol,675 mg sodium.
