Penne con Gorgonzola
Penne con Gorgonzola
3 tablespoons olive oil
1 medium onion, chopped
4 cloves garlic, minced
1 can (14 1/4 ounces) plum tomatoes, chopped
1/2 cup fresh basil
1/2 cup butter, softened
6 ounces Gorgonzola cheese, crumbled
1 pound penne pasta (or your shape of choice)
Salt and pepper to taste
1 cup Parmesan cheese, grated
Heat olive oil in cast iron skillet or saute pan. Saute onion and garlic. Add tomatoes and basil and simmer 20 minutes.
In small bowl mix butter and Gorgonzola. Set aside.
Cook pasta, drain and put in a bowl.
While pasta cooks whisk Gorgonzola mixture into tomato sauce. Season with salt and pepper to taste. Pour over pasta and sprinkle with Parmesan.
Serves four to six.
