Rigatoni alla Pastora

Rigatoni alla Pastora
1 pound rigatoni
4 tablespoons butter
1 pound bulk Italian sausage
8 ounces fresh spinach, chopped
1 pound fresh ricotta cheese
Salt and pepper to taste
1/2 cup grated Romano
Bring a pot of salted water to a boil and prepare pasta according to package directions.
In the meantime, in a saute pan melt the butter and brown the sausage, breaking it up with a spoon. When sausage is browned add spinach, ricotta and Romano cheeses and heat through. Season with salt and pepper to taste.
Toss with the hot pasta and serve immediately.
Serves four.
