Fiesta Beef Tacos

Fiesta Beef Tacos
8 taco shells
1 1/4 cups Basic Mexican Beef (recipe follows), fully defrosted
1/4 cup shredded cheese of choice, such as Cheddar, taco blend or Monterey Jack
Additional toppings of choice, such as chopped tomatoes, shredded lettuce, sour cream or salsa
Preheat oven to 350 degrees.
Place the taco shells in the oven until crisp, 5-7 minutes (or follow package directions).
Place the beef on a microwave-safe plate and microwave, at high, covered with a paper towel, until heated through, about 2 minutes.
To assemble the tacos, place 2 heaping tablespoons of the Basic Mexican Beef in each shell. Add 1 tablespoon shredded cheese and any other desired toppings. Serve at once.
Serves four.
Nutrition values per serving: 251 calories, 12 g fat, 15 g carbohydrates, 2 g fiber, 19 g protein, 52 mg cholesterol, 247 mg sodium.
