Savory Smoky Bacon & Sweet Tomato Hand Pie

4 ounces cooked bacon, crumbled

2 cups spinach, arugula, basil or watercress

 

1 pint cherry or grape tomatoes, roasted

Salt and pepper to taste

1 batch pie crust

Preheat oven to 375 degrees. Roll out dough on a floured surface to two 15x12 inch rectangles. Cut each into 6 rectangles. Brush edges of rectangles with water; mound about a tablespoon of bacon mixture in the center of each.

Fold dough over and press the edges to seal.

Place on a parchment-lined baking sheet, brush with egg wash. Cut slits in tops. Bake hand pies, rotating sheet halfway through the baking time until pastry is golden brown, about 35-40 minutes.

Serve warm or at room temperature.

Makes 12 hand pies
