Georgia’s Cobb Salad
1 bag (5 ounces) spring salad mix
1 cup Ashland Sausage Co. smoked mini ham, cubed
2 large peaches, peeled and cubed into 1-inch cubes
½ cup chopped pecans
1 cup sugar
1 cup frozen tater tots, sliced and browned
Dressing
2 peaches, peeled
¼ cup vegetable oil
2 tablespoons orange juice
2 tablespoon shredded coconut
1½ teaspoons lime juice
1 teaspoon fresh ginger, grated
In a salad bowl put spring mix salad. Add in rows diced ham, diced peaches.
In a sauce pan melt sugar and brown slightly; add pecans and stir to coat. Remove nuts from pan and rest on wax paper until cooled. Add pecans and toasted sliced tater tots in next row.
For the dressing: In a blender, add peaches, vegetable oil, orange juice, lime and ginger blend until smooth and pour over salad when you are ready to serve. Serve with Ham and Peach Quiche.
