Chicken Souvlaki
1 teaspoon dried oregano, preferably Greek
2 tablespoons extra-virgin olive oil
Juice of one lemon
1 teaspoon pureed garlic
½ teaspoon salt
2 large boneless, skinless chicken breasts, cut into 1-inch cubes
In a medium bowl, mix the oregano, olive oil, lemon juice, garlic and salt until well combined. Add chicken pieces and toss to coat. Marinate for up to 1 hour in refrigerator.
While meat marinates, soak wooden skewers in water. Heat grill to medium-high.
Thread meat onto skewers. Grill the skewered chicken until cooked through, a 3 to 4 minutes per side. Drizzle olive oil over top before serving. Serve with tzatziki sauce if desired.
Serves three to four.
