Skinny Sloppy Joes

11/2 teaspoons vegetable oil

1 medium onion, minced

½

teaspoon chili powder

Salt

2 medium garlic cloves, minced or pressed through a garlic press (about 2 teaspoons)

1 pound 93-percent lean ground beef

1 cup tomato puree

½

cup ketchup

¼

cup water

1 teaspoon brown sugar

Hot sauce

4 hamburger buns

Heat the oil in a 12-inch skillet over medium heat until shimmering. Add the onion, chili powder and 1/2 teaspoon salt and cook until the onion is softened, about 5 minutes. Stir in the garlic and cook until fragrant, about 30 seconds.

Add the beef and cook, breaking up the meat with a wooden spoon, until almost cooked through but still slightly pink, about 3 minutes. Stir in the tomato puree, ketchup, water, brown sugar and 1/4 teaspoon hot sauce. Simmer until sauce is slightly thicker than ketchup, 8-10 minutes. Season with salt and hot sauce to taste.

Spoon the meat mixture onto hamburger buns and serve.

Serves four.

Cook's note: For Smoky Joes, substitute 1/2 cup barbecue sauce for the ketchup.
