Sicilian Pot Roast
4-5 pounds beef roast (chuck, rump or bottom round)
Flour
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, finely diced
1 pound canned plum tomatoes
1 cup water
1 teaspoon salt
½
teaspoon sugar
¼
teaspoon black pepper
½
teaspoon basil
½
teaspoon oregano
½
pound fresh mushrooms, sliced
1 pound fresh green beans
Dust roast on all sides with flour. Heat oil in Dutch oven or other deep pot and brown meat on all sides. Remove to platter.
In same pot, saute onions and garlic just until soft. Add tomatoes, water, salt, sugar, pepper, basil and oregano.
Add roast back to pot and simmer about 1 hour and 15 minutes. Add mushrooms and green beans and simmer until vegetables are cooked, about 30 minutes more. Serve with pasta or potatoes.
Serves eight to 10.
