Wild Rice Salad

3 cups cooked wild rice

½

cup green pepper, diced

½

cup cucumber, diced, seeds removed

1/2 cup celery, diced

2 green onions, chopped

½

cup dried, sweetened cranberries

¼

cup chopped pecans

2 tablespoons Italian dressing

1 teaspoon sugar (see note)

In a large bowl, combine rice, green pepper, cucumber, celery, onions, cranberries and pecans. Stir in Italian dressing and sugar.

Serves six.

Cook's note: I add a little sugar because I buy wild rice in the Northwoods and the taste is really "wild."
