Pasta Quiche

1 cup alphabet noodles or other tiny pasta

¼ pound ham, chopped

¼ pound Swiss cheese, shredded

¼ cup parmesan cheese, grated

3 green onions, finely chopped

1 extra-large egg

½ cup heavy cream

½ cup milk

1 teaspoon salt

Pinch ground nutmeg

Heat oven to 350 degrees. Coat mini muffin cups with nonstick spray.

Cook noodles about 3 minutes, or until al dente. Drain.

In a large bowl, combine noodles with ham, cheeses and green onions; toss until well mixed. Divide among muffin cups.

In another bowl, beat eggs with cream, milk, salt and nutmeg. Spoon over noodle mixture not quite to the top. Bake 25 minutes or just until set and slightly browned. Use a sharp knife to remove from pans.

Makes 30.

Cook's note: These can be made a day or two ahead and refrigerated or frozen. Recipe doubles nicely.
