Hot Caramel Sauce

Hot Caramel Sauce
1/2 cup granulated sugar
1 cup brown sugar
3/4 cup white corn syrup
4 tablespoons butter
2/3 cup whipping cream
In a heavy skillet heat white sugar at low temperature until sugar melts and turns golden brown.
In a separate three-quart saucepan mix the brown sugar, white corn syrup and butter and bring to the boiling point. Add the caramelized white sugar and cook to 235 degrees (use a candy thermometer).
Remove from heat and add whipping cream, stirring to blend. Refrigerate.
Makes 1 pint.
