Iron Skillet Salmon

2 salmon fillets, a little more than 1 inch thick, skin removed2 teaspoons coarse salt1 teaspoon black pepper2 tablespoons brown sugarZest of 1 lemon2 tablespoons olive oilHeat oven to 400 degrees. Place cast-iron skillet in oven to preheat. In a small bowl, combine salt, pepper, brown sugar and lemon zest. Pat both sides of fillets with the mixture.Remove skillet from oven and place on a burner over medium-high heat. Add olive oil to the skillet. When hot, cook fillets 2 minutes per side then transfer skillet to oven 5 minutes more or until the fish flakes with a fork. Be careful not to overcook.Serves two.Nutrition values per serving: 329 calories, 11 g fat (2 g saturated), 16 g carbohydrates, 1 g fiber, 43 g protein, 101 mg cholesterol, 2,029 mg sodium.
