Hearty Baked Macaroni
Vegetable oil spray
1 can (16 ounces) tomato puree
1 cup water
2 teaspoons Italian herb seasoning
1/2 teaspoon garlic powder
1 1/2 pounds low-fat cottage cheese
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
8 ounces elbow macaroni, uncooked
4 ounces part-skim mozzarella cheese, sliced
Preheat oven to 350 degrees. Lightly spray a 9-by-9-by-2-inch casserole with vegetable oil spray.
In a small bowl combine tomato puree, water, Italian seasoning and garlic powder.
In another bowl, combine cottage cheese, onion powder and garlic powder.
Spoon one-third of tomato mixture into prepared casserole. Place half of macaroni, all of cottage cheese mixture and one-third of tomato mixture on top.
Add remaining macaroni and cover with remaining tomato mixture.
Cover and bake 1 hour. Uncover and top with mozzarella cheese. Bake, uncovered, 5 minutes, or until cheese is melted. Let stand for 10 minutes before serving.
Serves six.
