Cold Veggie Pizza Snacks
Vegetable oil spray 1 package (10 ounces) refrigerated pizza dough 8 ounces fat-free or low-fat cream cheese, softened frac12; cup nonfat or light sour cream 2 tablespoons fat-free or low-fat ranch salad dressing 4 cups chopped or finely sliced fresh vegetables (broccoli, carrots, radishes, mushrooms, cucumbers, seeded and drained cherry tomatoes, celery, red onion or any combination)Heat oven using package directions on dough. Spray a 9-by-13-by-2-inch baking pan or a baking sheet with vegetable oil spray.Pat dough over bottom of pan or pat into a rectangle on a baking sheet. Bake using package directions. Let stand until cool, about 10-15 minutes.In a small bowl, beat cream cheese and sour cream until smooth. Stir in salad dressing. Spread over crust. Arrange vegetables on top. Cover with plastic wrap and refrigerate until serving time.
