Green Gazpacho
4 cups diced honeydew melon
2 English seedless cucumbers, peeled and diced
½ onion, chopped
1 avocado peeled, pitted and chopped
1 jalapeno pepper, seeded and coarsely minced
1 clove garlic chopped
¼ cup while balsamic vinegar
1 tablespoon fresh lime juice
Salt and pepper, to taste
In a food processor or blender, combine honeydew melon, cucumber, onion, avocado, jalapeno pepper, vinegar, lime juice, garlic and salt and pepper until smooth. Chill for at least 1 hour before serving.
Serves four.
