Carrie’s Tortilla Roll-ups

2 packages (8 ounces each) cream cheese, softened

1 package (8 ounces) shredded cheddar cheese

1 packet (1 ounce) ranch dressing mix

½ red onion, chopped fine

1-2 medium green peppers, seeded and finely chopped

6 large (10-inch) flour tortillas

Salsa

In a large mixing bowl, stir cream cheese, shredded cheese, onion, green pepper and dry ranch dressing until well blended.

Lay out tortilla on a cutting board. Spoon out mixture onto tortilla and spread across evenly.

To roll, fold two sides in about one quarter inch. Begin rolling from the bottom, tucking in the folded sides as you roll. Use a small amount of the mixture to seal the end. Cut into 1-inch slices. Repeat with remaining tortillas and cheese spread. Refrigerate at least two hours before serving. Serve with salsa.

Makes about 30 roll-ups.
