Healthy Jalapeno Poppers

4 tablespoons panko bread crumbs

4 large jalapeno peppers

4 Laughing Cow cheese wedges, Queso Fresco and Chipotle flavor

½ cup low-fat shredded Mexican cheese blend

Heat oven to 400 degrees.Pour panko bread crumbs in a dry pan and toast until slightly browned, stirring often, about 5 minutes. Remove from heat and transfer to a plate to cool.Slice each jalapeno in half length wise and remove seeds. Be careful not to touch your eyes or face while working with peppers. Place the jalapeno halves, cut-side up, in a microwaveable and oven-proof dish and sprinkle with a little water. Cook on HIGH for 2 to 4 minutes until slightly softened. Remove and cool.In a small bowl stir the cheeses until well combined. Spoon the cheese mixture evenly into the jalapenos and sprinkle with the toasted panko. Bake 15-20 minutes until heated through and the cheese has melted. Serve with salsa if desired.Serves four to eight.
