Smoked Sausage Saute

1 pound smoked sausage, sliced

1 tablespoon butter or margarine

2 medium zucchini, halved lengthwise and sliced

1 tablespoon dried minced onion

½ teaspoon garlic powder or garlic salt

¼ teaspoon oregano leaves

¼ teaspoon ground black or white pepper

2 medium tomatoes, chopped, or 14 ounces canned diced tomatoes

Heat butter or margarine in a large skillet over medium heat. Add sausage and cook until lightly browned, 4 to 5 minutes. Remove to a plate and keep warm.In the same skillet, cook zucchini and onion until zucchini is crisp/tender.Return sausage to pan and add garlic, oregano and pepper; stir to mix. Add tomatoes (with juice if using canned); cook until heated through. Serve over pasta or rice.Serves five.Cook#146;s note: Italian, Polish and andouille may be substituted; cooking time may vary.
