Spinach Cheese Bars

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

1 cup milk

1 cup flour

1 teaspoon baking powder

1 teaspoon salt

¼ pound (1 stick) butter, room temperature

1 pound Monterey Jack cheese, diced

2 eggs, beaten

Heat oven to 350 degrees.In a large bowl, mix spinach, milk, flour, baking powder, salt, butter, cheese and eggs. Stir until well combined.Spread mixture into a 9-by-13-inch ban and bake 40-45 minutes. Cool slightly before cutting into 20 squares. Serve warm or refrigerate and serve chilled.Serves 10; two pieces per person.
