Madison’s Green Eggs and Ham

4 eggs

¼ cup chopped broccoli florets

Salt and pepper to taste

1 tablespoon butter

2 thick slices honey ham

1 cup baby spinach, coarsely chopped

2 ounces shredded cheddar cheese

In a medium bowl whisk eggs with broccoli; add salt and pepper to taste.

Heat butter in a skillet; add egg mixture and scramble until cooked through. Transfer to a plate and keep warm.

In the same skillet, sear ham on both sides until heated through. Transfer slices to plate; top each with spinach, cheese and eggs.

Serves two.
