Pumpkin Bars with Cream Cheese Frosting

4 eggs

1 cup oil

2 cups sugar

2 cups (1 pound) canned pumpkin

2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

½

teaspoon salt

2 teaspoons cinnamon

½

teaspoon pumpkin pie spice

teaspoon nutmeg

1 cup chopped walnuts or pecans

Frosting

3 ounces cream cheese, softened

6 tablespoons butter, softened

1 tablespoon milk

cup powdered sugar

Heat oven to 350 degrees. Grease a 151/2-by-101/2-inch jelly roll pan.

Into a mixing bowl add the eggs, oil, sugar, pumpkin, flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice and nutmeg; beat for 2 to 3 minutes; scrape sides and beat 3 minutes more. Stir in nuts.

Pour batter into prepared pan and bake 20-25 minutes or until toothpick inserted into center comes out clean. Cool completely before frosting.

For the frosting: In a large bowl with an electric mixer, beat together cream cheese, butter, milk and powdered sugar until smooth and well-combined. Spread over bars.

Serves 40.
