Mini Ham Pizzas

4 whole-grain "light" English muffins (see note)

1 can (6 ounces) no-salt-added tomato paste

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon dried Italian seasoning

½ cup water

4 ounces (1 cup) part-skim mozzarella cheese

4 ounces thinly sliced deli ham, chopped

Heat oven to 425 degrees.

Split and toast English muffins. Place on a baking sheet, cut side up.

In a small bowl, mix together tomato paste, garlic powder, onion powder, Italian seasoning and water. Spread sauce equally on each muffin half. Top with equal amounts of cheese and ham. Bake 8 minutes or until cheese is bubbly and melted.

Serves four.

Cook's note: For testing, we used Thomas' English muffins.

Nutrition values per serving: 253 calories (24 percent from fat), 7.63 g fat (3.89 g saturated), 35 g carbohydrates, 10 g fiber, 19 g protein, 30 mg cholesterol, 597.5 mg sodium.
