Roast Pork Tenderloin
¼ cup dark soy sauce
3 tablespoons hoisin sauce
1 tablespoon dry sherry
2 garlic cloves, minced
1 teaspoon fresh ginger, grated or ½ teaspoon dried
1 teaspoon brown sugar
Salt to taste
3-pound boneless whole pork tenderloin
In a small bowl, combine soy sauce, hoisin sauce, sherry, garlic, ginger, brown sugar and salt. Arrange pork in shallow glass pan and pour marinade over. Let stand at room temperature 2 hours, turning occasionally. Cover and refrigerate if marinating longer.
Heat grill or broiler. Cook meat 4 inches from heat, turning and basting several times until crisp, browned and cooked through, about 40 minutes. Slice pork thinly and serve immediately.
Serves nine.
