Leftover Beef Soup

Leftover Beef Soup

6 cups (48 ounces) beef broth

2 cups water

1-2 cups leftover beef, cut in bite-size chunks

1-2 cups leftover rice

2-3 ribs celery, chopped

2 carrots, chopped

1 teaspoon garlic, chopped

1 teaspoon salt

Pinch of cardamom

5-7 shakes liquid Maggi seasoning (see note)

1 teaspoon dry beef stew/goulash seasoning (see note)

1 teaspoon dry mushroom soup mix

Place everything into a large soup pot, bring to a boil and cook for about 10-15 minutes. Reduce heat and simmer on low for 20-30 minutes.

Serves four to six.

Cook's notes: Maggi seasoning is a bottled, soy-based Asian condiment; look for it in the aisle with soy sauce. Goulash seasoning packets, such as Knorr, can be found alongside the gravy and taco seasoning packets.

Nutrition values per serving: 480 calories, 15 g fat (6 g saturated), 52 g carbohydrates, 1 g fiber, 32 g protein, 65 mg cholesterol, 660 mg sodium.
