Pineapple Granita
2 cups fresh pineapple juice strained
½ cup sparkling water
¼ cup plus 2 tablespoons superfine sugar (or more to taste)
Juice of half a lime
¼ teaspoon kosher salt
Combine pineapple juice, water and sugar. Stir until sugar is dissolved. Add salt and lime. Taste and add more sugar if more sweetness is desired.
Place liquid mixture in an 8-inch pan and freeze until hard. Scrape with a fork until all mixture is broken. Serve with fresh cubed pineapple and lightly sweetened whipped cream.
Serves four.
