Ceviche Tradicional de Dorado Estilo Flamingo's

1 pound very fresh mahi mahi fillets, diced into 1/4-inch cubes1 cup freshly squeezed lime juice (about 12 large limes)1 cup diced plum tomato ( 1/4-inch dice) 1/2 cup diced red onion ( 1/4-inch dice) 1/4 cup seeded and minced serrano chilies 1/4 cup thinly sliced fresh cilantro1 teaspoon salt 1/8 teaspoon freshly ground black pepper 1/2 cup extra-virgin olive oilAvocado chunks and tortilla chips for garnishPut the diced mahi mahi in a nonreactive bowl. Add lime juice and with a rubber spatula fold the juice into the fish to coat well. Cover and refrigerate for 30-60 minutes, stirring occasionally. Strain.In a clean nonreactive bowl, combine the marinated mahi mahi with the tomato, onion, chilies, cilantro, salt, pepper and oil. Stir together with a rubber spatula.To serve: Divide mixture among 6 martini glasses or shallow bowls.
