Tequila Chicken
1/2 cup gold tequila 1/2 cup fresh lime juice 1/2 cup olive oil4 cloves garlic, minced1 teaspoon salt1 teaspoon sugar3 tablespoons cilantro, chopped1 jalapeno seeded and chopped (for more heat, do not seed)4-6 chicken breast halves or 1 whole chicken cut upCombine tequila, lime juice, olive oil, garlic, salt, sugar, cilantro and jalapeno. Add chicken and marinate for 1 to 2 hours (no longer, or chicken will fall apart).Prepare a hot grill. Cook chicken over hot coals 3 to 4 minutes per side. Serve with mango salsa (recipe follows), sour cream and tortillas.Serves four to six.Nutrition values per serving: 114 calories, 6 g fat (1 g saturated), 1 g carbohydrates, 0 fiber, 11 g protein, 30 mg cholesterol, 124 mg sodium.
