Peppered Turkey Burgers with Fresh Sage and Cranberry Mayo
Mayo 1/2 cup mayonnaise 1/4 cup whole berry cranberry sauce1 teaspoon orange zest1 1/2 teaspoons habanero mango hot sauce, see noteBurgers2 pounds ground turkey8 large fresh sage leaves, finely chopped1 large scallion, minced4 teaspoons poultry seasoning2 teaspoons salt 1/4 cup freshly ground pepper.6 tablespoons butter, softened6 onion rollsCombine mayonnaise, cranberry sauce, orange zest and habanero mango hot sauce. Refrigerate at least 1 hour or overnight.Prepare a hot grill.In a large bowl, gently mix together turkey, sage, scallion, poultry seasoning and salt; form into six burgers. Place pepper in shallow bowl and coat each burger. Grill over high heat 4-6 minutes each side. Spread butter onto onion rolls and grill lightly. Top each with a burger and dollop of mayo.Serves six.Cook's note: I like Melinda's hot sauce found at World Market or Trader Joe's.
