Grilled Marinated Chicken

2 tablespoons fresh lime juice2 tablespoons soy sauce2 tablespoons oil2 cloves garlic, minced1 teaspoon ginger, grated 1/4 teaspoon red pepper flakes, crushed4 large boneless, skinless chicken breasts (about 6-8 ounces each), trimmed wellCombine lime juice, soy sauce, oil, garlic, ginger and red pepper flakes. Place chicken in freezer bag and pour in marinade, making sure to coat all pieces. Let marinate 2 hours at room temperature or up to 8 hours in the refrigerator, turning bag occasionally.Grill chicken about 8-10 minutes per side. Serve with vegetable, potato and salad.Serves four with leftovers.Cook's note: Leftover chicken makes a great C 1/8sar salad. Slice chicken and toss with Romaine lettuce, croutons, fresh parmesan and C 1/8sar dressing.Editor's note: This dish could be cooked on an outdoor or countertop grill or broiled in the oven.
