Merveilleux!

4 egg whites (no yolks at all)1 cup superfine sugar 1/2 cup flour, sifted1 1/2 teaspoons vanilla extract, divided1 tablespoon confectioner's sugar, plus more for dusting16 ounces heavy cream1 cup strawberries1 cup raspberries1 cup blueberriesHeat oven to 275 degrees.In a perfectly clean bowl with clean beaters whip the egg whites with a few drops of vanilla extract (about 1/2 teaspoon), gradually adding half the superfine sugar. Continue to beat until whites are very stiff. Combine remaining sugar with flour and gently fold into beaten whites.Onto a buttered and floured baking sheet pipe or spoon ovals of egg whites (about 1 heaping tablespoon each). Press gently in center with spoon to form a nest. Sift confectioner's sugar generously over the top. Bake for 1 hour with oven door slightly open. Watch that they do not brown. Cover lightly with sheet of waxed paper if they start to color.Loosen meringues from baking sheet and turn over carefully onto sheet. Turn off oven, shut door and leave them to dry for 3 to 4 hours more.To serve: Beat whipping cream with 1 tablespoon powdered sugar and 1 teaspoon vanilla until stiff peaks form. Top "nests'' with whipped cream and berries.Serves eight.Cook's note: Instead of berries, try topping nests with whipped cream and 2 to 3 ounces chocolate shavings (use a carrot peeler).Nutrition values per serving: 355 calories, 21 g fat (13 g saturated), 39 g carbohydrates, 2 g fiber, 4 g protein, 76 mg cholesterol, 50 mg sodium.
