Salmon with Black Beans and Corn

Olive oil1 green or red pepper, choppedGarlic to taste1 small onion, chopped, or to taste4 cups cooked black beans, drained and rinsed2 cups frozen corn2 tablespoons tomato pureeSalt and pepper1-2 tablespoons cilantro, chopped, plus more for garnish6 salmon filletsHeat a thin layer of olive oil in a sauté pan and cook the green pepper, garlic and onions until tender. Add black beans, corn and tomato puree. Season with salt and pepper; add cilantro.In a second pan heat a thin layer of olive oil and sauté the salmon, about 5 minutes per side, or until fish is cooked through.Spoon the black bean mixture onto 6 plates, top with a salmon fillet and garnish with chopped cilantro.Serves six.Nutrition values per serving: 520 calories, 18 g fat (3 g saturated), 53 g carbohydrates, 18 g fiber, 37 g protein, 67 mg cholesterol, 485 mg sodium.
