Grilled Catfish with Citrus Marinade

4 catfish fillets, 4-6 ounces each

? cup orange juice

2 tablespoons soy sauce

1 tablespoon lemon juice

2 tablespoons vegetable oil

1 teaspoon chopped garlic

? teaspoon cracked black pepper

1 tablespoon chopped fresh parsley

Rinse fillets, pat dry and place in a shallow glass dish.

Combine remaining ingredients in a small bowl and pour over the catfish. Chill 1-3 hours.

Prepare a grill. Place catfish fillets, rounded side down, on an oiled grill rack or broiler pan rack and grill 4 inches from the heat source for 3 to 4 minutes on each side or until fish flakes easily with a fork.

Serves four.

Nutrition values per serving: 227 calories, 15 g fat (3 g saturated), 3 g carbohydrates, 1 g fiber, 18 g protein, 53 mg cholesterol, 575 mg sodium.
