Orange-Barbecue Chicken Chunks

2 pounds boneless, skinless chicken breasts or turkey breast tenderloins, all visible fat removedVegetable oil spray 1/2 cup barbecue sauce 1/2 cup all-fruit marmalade or spread, such as orange, apricot or plum1 teaspoon powdered ginger (optional)Rinse chicken and pat dry with paper towels. Cut chicken into bit size pieces.Heat a large skillet over medium-high heat. Remove from heat and spray with vegetable oil spray.
