Zucchini Boats

4-5 medium zucchinis1 tablespoon butter 1/4 cup parmesan cheesePepper to taste1 pound ground beef or ground round1 small sweet onion1 clove garlic6 ounces spaghetti sauce 3/4 cup mozzarella cheeseWash zucchini and cut off ends; slice in half lengthwise and hollow.In a small microwaveable dish, melt butter; stir in parmesan and pepper.Lightly grease a microwave-safe 9-by-13-inch baking dish. Place zucchini in dish and spread butter mixture on top. Cook on high power until tender, about 6-8 minutes.Heat oven to 350 degrees. In a skillet brown ground beef with onion and garlic. Drain well. Mix in spaghetti sauce and one-fourth of the mozzarella cheese. Fill zucchini boats with meat mixture and top with remaining mozzarella cheese.
