Peach Cobbler
1 tablespoon butter 6 large peaches, pitted and sliced1 1/3 cups baking mix (such as Bisquick) ½ cup plus 1 tablespoon sugar, divided 2/3 cup milk 1 tablespoon oil 1 teaspoon ground cinnamon 1 tablespoon cornstarch 1/2 cup boiling waterMelt butter in bottom of a 9-inch square pan. Put peaches over the bottom.In a bowl, mix together baking mix, 1 tablespoon sugar, milk and oil; spread evenly over peaches.In a separate bowl, mix together 1/2 cup sugar, cinnamon and cornstarch; sprinkle over dough, covering completely. Pour water evenly over topping and bake at 350 degrees for 35-45 minutes.Serve warm with milk, ice cream or whipped cream.Serves four to six.Cook?s note: If doubling the recipe, use a 9-by-13-inch pan.
